Tarek’s is a hidden gem in Halifax. When you walk in, they usually address you by name… since you are a regular. Or at least you will be once you try it. How can you resist since the food is so good and good for you. Tarek and his friendly staff are a well oiled-machine that prepare dish after dish of healthy, delicious Mediterranean-style cooking. They use the freshest ingredients possible, sourced locally when they are able.
Tarek generously offered his Mediterranean Chicken recipe to CRUSISIS to help you feed and warm your body and soul this winter. The beauty of this recipe is that it is made in a single pot and can be served immediately! It can be prepared with chicken, beef, fish, seafood or served as a vegetarian dish. Simple. Healthy. Delicious!

This recipe can be prepared with chicken and beef or served as a vegetarian plate. It’s simple to make; nutritious to eat; and attractive to serve! Ingredients:
Dinner for 4 people:
- 4 chicken breasts (boneless, skinless) or omit chicken for vegetarian plate
- 4 sm carrots
- 1 lb Swiss chard
- 1 lb spinach leaves
- 1 sm onion
- 1 lb Brussels sprouts (fresh or frozen)
Cooking Method:
- Chop onions; slice carrots (thin); & tear chard into 2" pieces (stems removed).
- Grill chicken in pot with olive oil until medium cooked.
- Add vegetables on top of chicken.
- Add 5 cloves garlic (chopped), ¼ tsp ground coriander, ¼ tsp curry powder & few dashes of nutmeg.
- Stir for 4-5 mins. on medium heat.
- Add 5 cups of water & 2 cups of tomato juice.
- Squeeze in 1 whole lemon & 4 Tbsp of red wine vinegar.
- Add S & P to taste.
- Bring to a boil. Reduce heat to medium & let simmer on medium heat for 20 mins.
Serving:
This dish can be served on top of rice or pasta. Better to serve in a deep dish to soak up all the flavorful juices.
Option (Shrimp or Fish)
Substitute meat for fish or seafood. When doing so, grill the shrimp or fish in a pan with olive oil, S&P. Serve fish or shrimp on top of sauce.
